Why is it a hormone-balancing dessert?
As someone with PCOS, I’m always keeping my hormones in mind. I included fresh spearmint and peppermint in the filling of these chocolate cups because of their benefits for PCOS and hormones:

How to make Chocolate Mint Matcha Cups
To make these delicious dessert cups, you’ll start by mixing the filling in a food processor. It’s a combination of coconut butter, fresh mint, matcha, vanilla extract, and maple syrup.
After you create the filling, you’ll roll it out in parchment paper and cut small circles. I used a mini cookie cutter, but they don’t have to be exact.
You’ll melt the chocolate and coconut oil together, either in the microwave (in increments of 30 seconds) or in a double boiler.
Add the baking cups to the muffin tin, then pour 1 tablespoon of chocolate into each. Put in the freezer for 5 minutes to set.
Remove from freezer and add 1 mint matcha filling circle to the center of each. Then pour ~2 tablespoon of chocolate on top of each and put back into the freezer to set for 15 minutes.
Remove from the freezer and enjoy your delicious chocolate dessert cups!

You can find it on Amazon or at most healthy grocery stores like Whole Foods or Thrive Market, or you can make your own by churning shredded coconut in a food processor.
I like to store mine in the freezer, but you can also keep them in the fridge. If you keep them at room temperature, they will begin to melt.

Easy Chocolate Mint Matcha Cups (Gluten-free, Dairy-free, Vegan)

- 2 cups dark chocolate chips
- 2 tablespoon coconut oil
Mint Matcha Filling
- ¾ cup coconut butter
- 1 cup fresh mint leaves mix of spearmint & peppermint
- 1 tablespoon matcha
- ¼ cup maple syrup
- 1 tablespoon vanilla extract
Instructions
Mint Matcha Filling
- Add the coconut butter, mint, matcha, vanilla extract, and maple syrup to the food processor. Mix until fully blended.
- Roll your filling out in parchment paper and cut into small circles. I used a mini cookie cutter, but they don't have to be exact.
Chocolate
- Melt the chocolate and coconut oil together, either in a bowl in the microwave (in increments of 30 seconds) or in a double boiler. Stir frequently to avoid burning the chocolate.
Assemble
- Add the baking cups to the muffin tin, then pour 1 tablespoon of melted chocolate into each cup. Put in the freezer for 5 minutes to set.
- Remove from the freezer and add 1 of the mint matcha filling circles to the center of each muffin tin. Then pour ~2 tablespoon of chocolate on top of each until the filling is fully covered, and place back into the freezer to set for 15 minutes.
- Remove from the freezer and enjoy!
